Who says all breakfast muffins need to be sweet? Well, you can still enjoy a delicious savoury breakfast muffin like this one without any guilt. This is a quick and so simple Savoury Muffins recipe, packed with smoked cheese and crispy smoked tofu, these vegan muffins are amazing for breakfast or lunch, so quick and easy to make that you probably have everything you need to make them right now. They are flavourful enough to enjoy on their own but are also delicious served with hot sauce or even a salad.
Ingredients:
- 2 cups all-purpose flour
- 1 cup (Vemondo) smoked tofu
- 1 cup smoked vegan cheese (Applewood)
- 1 tbsp turmeric
- 10g backing soda
- 1 tbsp lemon juice
- 1/4 cup chopped parsley
- 1/2 cup olive oil
- 1 cup oat milk (and if needed you can add 1/2 cup more)
- 1 tsp oregano
- 1 tbsp dark soy sauce (for tofu)
- 2tbsp olive oil (for tofu)
- spry oil to grease the tin
Instructions:
- Preheat the oven to 180°C.
- First drain the tofu and gently press it in a paper towel over the sink.
- Cut tofu into small cubes and spread them in a single layer on a parchment -lined baking sheet, toss the cubes with olive oil and dark soy sauce, transfer the backing sheet to a 180°C. oven and cook until the cubes are golden brown.
- Mix all the dry ingredients in one bowl.
- Mix all the wet ingredients in a bowl or if you prefer a jug that will be great as well and stir until everything is well combine
- Add the wet ingredients into the dry ingredients and mix until totally combine.
- Scoop the mixture into 12 muffin shapes and bake them for 20-25 minutes or until muffins are golden brown.
- Cool for a few minutes in the tins, then transfer to a wire rack to cool.
Notes:
- It is super important not to overmix the ingredients, if you have a little lump in the mixture is totally fine.
- You can try making them with gluten-free flour.
- I will highly recommend that after 15 min (in the oven) you should check your muffins with a skewer inserted in the muffin, if the skewer comes out clean the muffin is ready, otherwise give them a few more minutes
- Allow the muffins to cool on a rack (ideally) it will stop them going soggy.
- Store them in the fridge.
